Blue Strawberry Basil Vegan Ice Cream

Blue Strawberry Basil Ice-cream is so fresh and perfect for summer days! To be honest the first time I heard of the pairing, basil in ice-cream or in lemonade I thought, whhhhhy?? but actually its sooooo fresh tasting. You don't taste the basil really! Let me know if ya like it! Recipe below! 

1 cup cashews
1 14-ounce cans coconut cream OR full fat coconut milk  
2/3 cup strawberries

1/3 blueberries
1/4 cup coconut sugar or to taste
10 fresh basil leafs

Blend all together and freeze in a ziplock bag laying flat or into ice cube treys. Night before . Once frozen break into chunks and blend. And put back in freeze for an hour + ! Scoop up your heaven ! If you let freeze too long just let sit out on counter to soften a bit before scooping!

You can also blend once and freeze for 4-6 hours but this extra step tends to upgrade the ice-cream texture! 

You can also make is just strawberry by eliminating the basil and exchanging the blueberries for more strawberries :)
