Raw Chocolate-Hazelnut Bliss Bites
2 cup pitted dates (medjool are best but cooking dates are good too)
1/4 cup organic coconut shreds *plus more for rolling
4 tablespoons organic raw cocao powder
2 teaspoons Vanilla bean paste
2 cup toasted hazelnuts, skin removed
Toast hazelnuts at 350 degree for 15-20minutes (until fragrant, don't let burn) roll in towel to remove some of the skin (this will bring out the warm rich hazelnut flavor and take the end product to the next level! SO GOOOOD!
Process the dates, cacao and vanilla until well combined in a food processor
Add hazelnuts and coconut shreds and pulse until finely chopped.
Use damp hands and roll them into balls and coat in more hazelnuts or coconut OR vegan chocoalte chips :).
Store in the fridge or freezer. Great healthy snack!
