As Mothers Day is soon approaching it’s naturally the time of year that I reflect on my own mother and all that she has done for me. A powerful woman who had the strength, patience and love to raise seven children! I love her and I am so grateful for her everyday and I hope that I am as good a mother as she was to me.
This Mother’s Day I am super stoked to have partnered with Vitamix to celebrate the gift that keeps giving! On this Mother’s Day I thought I would share a really fun soup recipe that I used to make when Shem and I were first married. It is so delicious and with a Vitamix it is so easy!
AVOCADO SOUP W/CASHEW CILANTRO SOUR CREAM
2 ripe avoados
1 heaping tablespoons garlic
3 cups vegetable stock
8 oz. coconut milk
3 tablespoon lemon or lime juice
1 cup fresh cilantro
1/2 chopped yellow onion
Salt & Chili flakes to taste
1 teaspoon olive oil
Rough chop your half onion and place in a sauce pan on medium heat with olive oil and sauté for 5 minutes. Add your garlic to sauce pan and sauté onions and garlic together for 5 minutes. Add in your vegetable stock and let simmer for 2-3 minutes.
In the blender add in Avocados, lemon/lime juice, cilantro, coconut milk and your vegetable stock with onions and garlic. Secure the lid tightly along with ensuring the plunger whole is covered and secured. Turn your blender on and allow ingredients to mix for 10-15 seconds then turn the dial to 10 for 3-5 minutes or until the soup has reached your desired temperature. Add in salt and chili flakes to taste and blend mixture for 10-15 seconds. Et voila your soup is ready.
CASHEW CILANTRO SOUR CREAM
1 cup boiled cashews
1/4 cup cilantro
1 tablespoon garlic
1 1/2 tablespoon apple cider vinegar
1 tablespoon water
1 tablespoon lemon juice
Salt to taste
In a small pot boil your cashews for 5 minutes. In the small mixing container bowl place the cashews, cilantro, garlic, apple cider vinegar, water, lemon juice. Securely fasten the blade adapter and turn blender on. Once the ingredients are mixed turn the blender to 10 for 2 minutes. Remove container and add salt to taste. Mix for another minute or until your mixture is smooth and creamy. Add just a dollop of your sour cream to your soup and enjoy!
